Marshmallow

INGREDIENTS

Group 1

400g        Sugar

250g         Water

Group 2

25g            Gelatine

45g             Hot Water

 

PROCEDURE.

  1. Boil together group 1 in a pot and set aside to cool down slightly.
  2. Mix together group 2 and leave to soak throughly.
  3. Add gelatine mixture to the sugar water mix in a mixing bowl and whisk to form a stiff peak.
  4. pipe out as required (dust with coconut to prevent sticking)
  5. Leave to cool and set.
